That's why they hand-machine the contact area between the pot and the lid to to fit a gap less than 0.01 mm of a variance. This helps intensify all the natural flavors of the ingredients you are steaming, sautéing, braising, and etc. 

 

 

About the Maker: 

Vermicular

 

The Hijikata Family started an iron foundry called Aichi Dobby in 1936,  manufacturing industrial sewing machines. With their home base of Nagoya, Japan over time their foundry became renowned for its ability to cast and machine with extreme accuracy. As the sons inherited the foundry they decided to take their craft into the world of cast iron cookware. A unique insight revealed itself when they found that stainless steel and aluminum pots formed a superior seal between the lid and pot than the existing cast iron counterparts. The Hijikata brothers utilized their company’s cast iron expertise to create enameled cast iron pots with perfectly-fitted lids. A new industry standard for cast iron cookware!

I love this cream dutch oven! We used it last night and it’s such good quality. I also love that I went for the cream color. More of that ‘embracing the patina’ if you will. I’m looking forward to adding the smaller version too!
